		<description>Brilliant! I bought duck legs on a whim yesterday and thought I&#039;d make a risotto with duck meat, peas and swiss browns or ordinary mushrooms. So when I googled &quot;duck risotto&quot; and this came up I was thrilled. I&#039;m about to pan-fry the legs, then slow-cook, and I&#039;ll use the recipe above and hope! I was really disappointed that I couldn&#039;t get carcasses to make my own stock, so chicken stock will have to do. What do you think about the swiss browns? The peas are just for colour, really, but I think they&#039;ll work. I like this website - keep it up! I&#039;ll put it in my bookmarks.

		<description>Nice recipe Michael, though you&#039;ve struck the problem with using duck legs purely to fry... that stringy and sometimes dry nature is a problem...  But if you slow cooked them beforehand or make a lazy duck leg confit, that would all start to work in your favour and you could just shred the meat over the top, or mix it into the risotto.

Lovely photo too, think I might need some duck for dinner tonight :)
