From what I have seen and heard about most of the people doing this just do what they do best.. Then some try and copy the innovators Which to be quite honest doesnt appeal to me..  my feeling as a chef of some 15+ years of cooking is that you do what you do well and it is well received but I am still keen to get the mood of the meeting!
